MERC 2027 Pizza puts a Student’s Recipe on the Menu

McGREGOR, Minn. — A pizza recipe created by a McGregor High School student is getting a year-long place on the menu at Log Home Wood Fired Pizza, while also helping raise money for a scholarship for the school’s Class of 2027.
The MERC 2027 was created by current McGregor senior Cooper Geyen after Log Home Wood Fired Pizza invited members of the Class of 2027 to submit ideas for a specialty pizza. Each year, Log Home works with a McGregor High School class to create a pizza, giving students the opportunity to come up with their own recipe. This year, Cooper and two friends began tossing around ideas before settling on a combination they thought would be different from pizzas already offered.
“We were thinking about what they didn’t have yet,” Cooper explained. “We like Alfredo, so we thought, why don’t we just try putting that on there?”
Cooper submitted his recipe along with several other ideas from classmates. His creation was ultimately selected as the Class of 2027 pizza. The MERC 2027 features a mozzarella-stuffed crust, garlic Parmesan sauce, a five-cheese blend, chicken, garlic oil and parsley. The combination gives the pizza a creamy, cheesy flavor with garlic and chicken as the primary toppings.
The pizza has already received positive feedback from customers, according to Cooper. “A lot of people have liked it,” he said. “I haven’t heard anyone say that they don’t like it.”
The pizza has also been getting attention at local events. Cooper said he heard from others that the MERC 2027 was among the better-selling pizzas at a recent Paul Bunyan Electric Company event.
The special pizza is more than just a menu item. A portion of the proceeds from every MERC 2027 sold will go toward a scholarship from Log Home Wood Fired Pizza for a Class of 2027 McGregor High School graduate. The MERC 2027 will be available through April 30, 2027, at Log Home Wood Fired Pizza’s shop in McGregor.
Cooper is a four-sport McGregor athlete. He participates in football and basketball and previously played baseball before joining the golf team this past spring. His involvement in school activities gives him another reason to encourage classmates, athletes and community members to stop by and try the pizza.
For those heading to a McGregor sporting event, Log Home offers an easy stop for a meal before or after the game. The next home football game is scheduled for Friday, Oct. 9, when McGregor will celebrate Homecoming. Upcoming home volleyball games include Thursday, Sept. 24, against Cook County; Thursday, Oct. 1, against Cromwell-Wright; and Thursday, Oct. 8, against Carlton-Wrenshall.
Log Home Wood Fired Pizza has also announced its fall hours. The shop is open Wednesday and Thursday from 4 to 8 p.m.; Friday from 11 a.m. to 8 p.m.; Saturday from 4 to 8 p.m.; and Sunday for brunch from 11 a.m. to 2 p.m.
